GRILLED SEAFOOD PAELLA

Our Regatta Gift Package comes with a variety of delicious seafood options. And our favorite thing to do when we’ve got a whole lot of delicious to choose from is to make a sumptuous paella! Paella is a Spanish rice dish bursting with saffron. We’ve adapted this recipe to make perfect use of the grill, with a few more adjustments for making an easy paella right at home. Here’s what you need to do.

INGREDIENTS

½ pound White Mexican Shrimp
½ pound 10/20 Dry Scallops
2 Cold-Water South African Rock Lobster Tails
4 ½ cups vegetable, seafood, or chicken stock
1 tsp saffron threads
¼ tsp kosher salt
1 sweet onion, chopped
1 bell pepper, chopped
5 cloves of garlic, minced
3 cups arborio rice
1 (14oz) can diced tomatoes
1 cup frozen green peas
3 scallions, finely sliced for garnish

DIRECTIONS

Add your stock to a saucepan over medium heat and bring to a boil. Once boiling, add your saffron and salt, then turn off the heat, remove the pan from the burner, and allow flavors to steep for about 15-20 minutes.
Heat your grill to 375 degrees Fahrenheit (medium-high heat). While it’s heating, place a large cast iron pan on your stove inside and heat with oil over medium heat. Add onion, pepper, and garlic and cook for 5-7 minutes, or until vegetables have slightly softened.
When veggies are ready, move your cast iron pan from the stove to the grill. Add your rice and cook for 4-5 minutes to get rice lightly toasted and coated in the ingredients in the pan, then add saffron-steeped stock, tomatoes, and peas. Use a grill spatula to press rice down to the bottom of the pan, then close your grill cover and let rice cook for 15 minutes without stirring. Check occasionally to ensure that there’s enough moisture in the pan. If you need to add more, just add a cup of hot water.
Add seafood to the pan, nestling it in there so it’s covered in broth and tomatoes. Cover your pan with foil and cook an additional 7 to 10 minutes, or until seafood is cooked through.
To check if your paella is done, take your grill spatula and gently lift up some of the rice. You want it to be brown on the bottom. If it’s not, keep uncovered and turn up the heat slightly, then cook for a few minutes more. Garnish with sliced scallions and you’re done!
