Scotland and tacos don’t normally go hand in hand, but you’re just going to have to trust us when we tell you that our Scottish Smoked Salmon feels right at home in a flour tortilla—especially when it’s blanketed in a creamy corn slaw. INGREDIENTS
1 pound Scottish Smoked Salmon, chopped into bite sized pieces
1 pound frozen corn, thawed
2 red bell peppers, diced
2 shallots, diced
½ cup mayo
¼ tsp garlic powder
¼ tsp mustard powder
¼ tsp smoked paprika
¼ tsp pepper
¼ cup chopped fresh cilantro
16 6oz flour tortillas
Lime, sliced into wedges
DIRECTIONS
Make your corn slaw. To do so, combine thawed corn kernels, red bell pepper, and shallot in a large bowl. In a separate large bowl, combine mayo with spices, including the chopped fresh cilantro. Stir in the corn mixture and stir well to combine.
Warm your tortillas, then top with chopped Scottish Smoked Salmon pieces and your creamy corn slaw. Finish off with a squeeze of lime.
